Shea butter, also known as Karité Butter, Galam Butter, or simply shea oil, is a plant from the Sapodillomycetes family found in West and Central Africa. It is cultivated primarily for its fruit, which is very rich in fat. Crushed seeds are used to produce the famous butter. The fruit matures in about five months. A single tree yields approximately 15-20 kilograms of plum-like, yellow-green, and edible fruit. This amount will ultimately yield one kilogram of butter. According to the traditional recipe, Karité butter is made by hand exclusively by women; men are not involved in the production process and are not allowed to touch the trees except during felling. The processing of the seeds varies depending on the region, but they are usually first dried in the sun, removed from the hard shell, and then crushed in mortars into a very fine powder. The powder is dried and cooked in water until it reaches a uniform, smooth consistency.
